白饭，怎么煮才好吃？
1）去芜存菁很重要
煮饭前先尽量去除已出现白头的米粒，保留晶莹剔透的完整米粒，不仅看起来好吃，口感也比较好。
2）快速清洗+轻轻搓揉
为了彻底洗净，洗米时可利用筛子配搭外层的盆子一起清洗，重复2～3次快速搓揉与沥干的步骤，直到原本流到盆子里的混浊污水变得透明。不仅可再次淘汰破碎不完整的米粒，也可以有效沥干夹在米粒缝隙中的水分。

3）充分吸水口感更好
利用电锅煮饭要切记“一杯米一杯水”的基本原则，加入生水或饮用水皆可。加完水后，建议先泡30～40分钟，让米粒吸饱水后再煮，米饭可达蓬松口感。浸泡之后不需把水倒掉重新加水，否则米饭会过于湿软。
如果时间充足，也可以将洗好的米放在筛子里沥干之后，放入冰箱2～3个小时，之后再依比例加水，口感更胜单纯用水浸泡的米饭。

4）依个人喜好而定
如果使用电锅煮饭，通常要煮到8分满的饭，需在外锅加至少一杯量杯的水（为避免失误，建议使用买电锅附赠的量杯），以此递增或递减，或视个人口感而斟酌；如果使用电子锅煮饭，外锅无须另外加水。
煮饭时内锅的水一定要盖过手吗？这个动作是为了测量内锅的水量，不过煮饭的水适量即可，不一定要盖过手。水量需求应该依放入锅内的米量而定。此外，米还有新旧之分，新米（当年种植采收的稻米）可少放点水，米和水的比例大约1：1，旧米（前一年储存的稻米）因本质较松软、吸收水分不易，建议多放一点水，大约1：1.2，煮出来的饭会更好吃。
米好洗加水之后，可滴入数滴沙拉油再煮，如此一来米饭较为油亮可口，之后用来料理炒饭也会很蓬松好吃。如果喜欢稍微松软的口感，可以使用日本料理师傅常用的手法，在下锅前滴两三滴柠檬原汁，米饭不仅松软，更能有一股淡淡清香。
5）再焖10分钟是关键
利用电锅煮饭的重点在于开关跳上来之后，一定要再焖15～20分钟，不然米粒中心很容易蒸不透。
如果利用蒸笼煮饭，因为蒸气会不断在中心点上下流窜，蒸煮之前一定要先把中心的米拨开，以免最后出现锅巴。
