【好煮意】粽子总是黏粽叶怎么办？
本地裹肉粽的人大部分都会使用中国入口的粽叶，裹甜粽则使用本地粽叶，市面上见到小贩们售卖的干粽叶都是中国入口，因此保存期限比较长，新鲜的本地粽叶由于保存期较短。中国粽叶叶子面积较大，本地粽叶则比较小，如要裹肉粽比较有难度。中国入口的粽叶和本地竹子生产的粽叶，从价格和使用方式，都有很大的不同。
中国粽叶晒干后保存期较长，但也不可以沾水，一旦沾水，就无法在继续保存，因为它会发霉，就算再次晒干也于事无补。
至于本地粽叶，本地还是有许多人種植粽叶的竹子，他们都是专业种植，并非收割野生竹叶。本地粽叶也比中国粽叶薄，在裹粽子时就会发现它的差别。裹肉粽多辦會使用中国粽叶，因為裹出來的粽子會比较香。
你是否曾遇过粽子加热后，总是黏了一堆米粒在粽叶上，或是裹粽子裹到一半，粽叶却突然破掉的状况呢？这些问题其实都和粽叶的处理息息相关，只要学会正确的粽叶处理方式跟加热方法，就能跟以上这些状况说掰掰啦！
※粽叶在使用前要如何处理呢？
粽叶买回家后可先放入热水中氽烫约10分钟后取出，再以清水跟菜瓜布海绵面刷洗干净，接着放入清水中隔夜浸泡，第二天取出粽叶，擦干水分便可准备包粽。
粽叶浸泡时很容易卷起来，建议取重物把叶片压平浸泡，隔天取出叶片时，会比较好操作。
浸泡的过程，能让粽叶吸收足够的水分，让叶片组织比较有弹性，裹粽子时比较不容易破裂。
如何避免粽子黏粽叶？
进行前置作业时，粽叶一定要先煮过或浸泡，吸收充足的水分；裹粽子时，要用粽叶的光滑面跟糯米接触，并在粽叶表面涂上一层薄薄的油；裹入粽子的糯米，也可先加入少许油翻炒，如此一来就能让粽子煮熟后更不易沾黏。
※再次加热时
第一次煮好的粽子，因为粽叶大多含有足够的水分，趁热打开品尝，糯米不太会黏在叶子上。再次加热就不同了，粽子放凉后，糯米本来就会变得更容易沾黏，加上粽叶的水分会在过程中逐渐散失，糯米也就更容易黏在粽叶上。想减少这样的状况发生，关键就是要让粽叶保持湿润。
微波加热法：将1～2张厨房纸巾沾湿，包在解冻后的粽子外面，再放入微波炉中微波约2分钟即可。沾湿的纸巾，有助于维持粽叶湿润，让粽子比较不会沾黏在粽叶上。
清蒸加热法：视粽子的分量跟状态调整水量。若是完全冷冻，要放1杯到1杯半的水，解冻状态，则放入1/3杯或半杯水，加热完毕电锅跳起后，稍微焖一下即可。清蒸时产生的水蒸气，有助于让粽叶保持湿润，让粽子不易沾黏。
水煮加热法：水煮粽要避免粽叶沾黏，加热时可选择放入滚水中再一次水煮，让粽叶吸收水分、回复湿润状态即可。
